The kids and I love these things called Wallaby Bites. Have you seen them? They are in the health food aisle, so they’re healthy, obvs.
However this week I was overcome with creativity and actually threw together my own version and they came up pretty darn well.
1 1/2 cups of rice puffs (I used the ones from Freedom Foods)
1/2 cup cashews (I think you could leave these out if you wanted to go nut free... just increase the other ingredients a lil’ bit)
1/2 cup cranberries
1/2 cup currants
1/2 cup pumpkin seeds
1 tsp vanilla
1/2 cup rice malt syrup (maybe more)
Roughly chop of blend the nuts, seeds, cranberries and currents together.
Pour into a bowl and add the rice puffs, vanilla and rice malt syrup.
Mix well until it all comes together (add more rice malt syrup if you need).
Press into a slice pan lined with baking paper.
Once set cut into small squares.
Melt 100g of dark choc (I’ve used 70%).
Dip each one in chocolate (if you want tips on this process nag my good friend over at Wholefood Simply .... I know she has a demo video ;) ) and place back in the fridge or freezer to set.
My daughter apparently does not like chocolate that much (I’m getting her paternity tested 😂) so I’ve done some with the chocolate just drizzled over.
Keep these in the fridge or freezer.
